Outside the two peak months, a week of half board on a mid-range island often comes in below the equivalent in the western Mediterranean, and because Greece is on the euro there's no currency to change and no exchange margin to lose.
Daily summer ferries link the main island groups, and high-speed catamarans cover Athens to Mykonos in around two and a half hours, so a two-centre trip is far simpler to put together here.

Athens (mainland): Greece's capital pairs the Acropolis, the Plaka old quarter and a clutch of world-class museums with an easy ferry link out to the Saronic islands, which makes it the natural start or end point for Athens holidays that fold a couple of city nights into a wider island trip.
Crete (south): The largest island carries everything from the Minoan ruins of Knossos to the pink sand at Elafonissi, with the busy west around Chania and Rethymno and a slower, more traditional east near Sitia, so Crete holidays fill a full week without ever once repeating a beach.

Boat trips & sea caves: Day boats run out to the Blue Caves of Zakynthos, the smoking volcano and warm springs in the bay off Santorini, and the deserted islets scattered around Crete and Rhodes, usually with a swim stop or two thrown in.
Hike the gorges: Crete's Samaria Gorge runs roughly 16 km down to the Libyan Sea and is one of Europe's longest walks of its kind, with far shorter trails on most islands for a cooler early-morning leg-stretch.
Wine and food tours: Santorini's Assyrtiko vineyards, the raki distilleries of inland Crete and the bold reds of Nemea on the mainland all run tastings, very often with a long, unhurried lunch attached to the end. Most cellars are an easy taxi from the main resorts and take walk-ins outside the August rush.
June, September and the last week or two of May are the standout stretch — seas warm enough to swim in, daytime temperatures in the mid-to-high 20s°C, and far smaller crowds than the peak. July and August are the hottest and liveliest months, and the right call if you're locked to school holiday dates rather than free to travel either side of them. Prices and airport queues both ease the moment you step outside those two months.
